Kid Friendly - Healthy Grainy Waffles

Woke up last Saturday just jonesin' for some homemade waffles.  I did a quick 2 minute google search and came upon these whole grain waffles on  They were yummy and filling.  One did the trick for me.  Paired with some chicken sausage (I have to make sure I have protein in the morning or I will never get even close to RDA) and strawberries.  Oh, and a little maple syrup, of course.


2 eggs
1 3/4 cups 2% milk
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1 cup whole wheat pastry flour
1/2 cup ground flax seed or flax seed meal
1/4 cup wheat germ
1/4 cup flour
4 tsp baking powder
1 tbsp sugar
1/4 tsp salt

In a large bowl, whisk together the eggs, milk, oil, applesauce and vanilla.  Beat in the remaining ingredients and blend until smooth.  Mine was a little thin at this stage so I added another 1/3 cup of flour.  I also think this would be a great time to blend in some pumpkin or banana!!

Cook on a well oiled waffle iron until brown and the tops are crispy.  Remove from iron and eat.
We all enjoyed these.  Well, except my daughter.  She opted for Eggos.  sigh...  Someday.

  1. Sounds really good. I need to get a waffle iron! There seem to be so many good whole grain waffle recipes. My daughter would go for the waffle and skip the eggs. I made some lentil crepes with potato masala for our Sunday brunch! Something different!

  2. I would love that crepe and masala recipe!! And yes, we love our waffle iron. I don't use it nearly enough though. It gets lost in the back of the "kitchen stuff" cabinet.
